Spain Ingredients are only for guidance et can easily be changed according to your taste and to what is present in your fridge ! Here is a tested and approuved proposition ! For this recipe the only thing to avoid is a cast-iron pan (because it keeps heating and continue to cook even out of fire, making the rice sticky).
400g Basmati rice
1 tomato can
1 handfull (cooked) green beans
1 handfull peas
1 handfull cashew nuts
1 stock cube
1 minced red sweet-pepper
3 sliced mushrums
1 minced onion and 2 garlic cloves
5 baby corn and/or artichoke core (can)
Safran, paprika, salt, pepper
2 tbsp olive oil
Recipe of vegetarian Paella :
In a big deep pan simmer : onions + garlics + sweet-peppers
Add the mushrums and then tomatoes + peas + green beans.
After a few minutes add the washed rice, and mix gently with a wooden spoon.
Preparation of the stock : in a big bowl mix 800 ml hot water + safran + paprika + stock cube
Add the stock progressively, the rice must absorb the liquid but stay al dente and not sticky.
Add salt and pepper and the cashew nuts. ! Remember to add the stock little by little! Continious overseeing is important to avoid obtaining an abject sticky stuff.
