Tomato Rougail
Tomato Rougail recipe

Reunion This Rougail is a kind of cool pimented sauce served with carry (hot dish). It comes from Reunion and Mauritius.

Ingredients :
2 big tomatoes,
2 schallots,
fresh ginger (stick of 2 cm or 1 full tsp of powder)
2 tbsp olive oil
herbs (cilantro or coriander)
combava (one pinch and never more because the taste is strong)
1/2 to 1 habanero chili (remove seeds!!!)
1/2 tsp of salt

Recipe of Creole Tomato Rougail :
Cut in 2 and seed out the chili, rinse it with clear water and cut it into small pieces.

Peel and grate the ginger
Peel and minse schallots
Crush together salt + chili + schallot + ginger
Cut tomatoes in 4, seed out and cut in dices.
Mix tomatoes with the chopped ingredients and combava and herbs.
Add the olive oil. If too hot add tomatoes !
