2 big eggplants
10 croutons (= bread crumbs)
400 g crumbled feta
200g grated cheese
2 big tomatoes (cut into slices)
salt, pepper and herbes de provence
Recipe of vegetarian moussaka :
Cut the eggplants lengthwise, into thick slices and steamcook them.
When the eggplants slices are ready, put them in a big oven dish on a row, then a line of tomatoes over, some bread crumbs and feta cheese dices.
Dust with salt, pepper, and spices (cumin, garlic).
Recover with grated cheese and season with herbes de provence.
Preheat the oven at 150░C. Let cook a few minutes till the grated cheese melt.
