Cameroon Ivory Coast Mali Senegal Perfect complete winter recipe, generally served with rice or fufu. This peanut sauce is also called Tigua dengue in Mali.

Ingredients :
1 garlic clove, 1 onion, 1 shallot
1 tomato can
1 peanut butter can
1 stock cube, salt, ginger powder and chili
2 bay leaves
vegetables : 1/2 cabbage, 2 potatoes, 2 carots, 1 eggplant, 2 sweet potatoes : all is cut into big dices

Recipe of vegetable Mafe :
Frye the onion, the smashed clove and the shallot.
Roast for a few minutes, then add the vegetables dices.

Sweat for several minutes and stirring regularly.
Cover with water, put in the tomato can, stock cube and spices (chili, stock cube, ginger, salt) and the bay leaves.
Cover partially, turn down the heat and let cook slowly for 30 minutes.
When the vegetables are cooked, you can add the peanut butter and let reduce without covering till the sauce obtains a creamy texture.
Serve hot with (whole grain) rice.
