Fresh ginger is peeled, crushed, and delayed in water and then filtered and pressed. Then boil the solution until it thickens. The result is mixed with sugar and put on a clean linen to dry with the sun heat. Move the result to crumble it into pellets and put in a plastic bag. It's also possible to buy directly the ginger pellets.
